Khanitta Ruttarattanamongkol is an Assistant Professor of Food Processing and Engineering in the Department of Agro-Industry, Faculty of Agriculture, Natural Resources and Environment, Naresuan University, Phitsanulok, Thailand. She held a post-doctoral research position in Food Engineering for 2 years after she completed her Ph.D. in Food Science and Technology from Cornell University, USA in 2009. She is interested in innovative food science and emerging technologies, engineering and processing aspects of foods and agricultural products, and value addition for global markets. Her research expertise is in the areas of physical and engineering properties of foods, supercritical fluid extrusion and extraction of biomaterials for food and non-food applications, and novel foods especially alternative protein sources from plants and insects.
